Ingredients:

  • 1 onion
  • 1 garlic clove
  • 1 tbsp sunflower oil
  • 250 g red lentils
  • 1 can tomatoes with juice
  • 400 ml coconut milk
  • 500 ml water
  • 1 tbsp WELA Vegetable Stock Concentrate
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • Salt and pepper to taste

Instructions:

  1. Peel and finely chop the onion and garlic. Heat the sunflower oil in a pot over medium heat and sauté the onion and garlic until translucent.
  2. Add the red lentils, tomatoes with juice, and coconut milk. Stir everything well.
  3. Pour in the water and add the WELA Vegetable Stock Concentrate. Let the soup simmer over low heat for about 20 minutes until the lentils are tender.
  4. Season the soup with chili powder and turmeric. You can also adjust the seasoning with WELA Vegetable Stock Concentrate if needed.
  5. The soup tastes even better if you let it sit in the refrigerator overnight to develop the flavors.
