Introduction: Chicken in a fruity mango bell pepper sauce is a tasty and quick dish that strikes the perfect balance between savory and fruity. With Wela Chicken Stock, the sauce becomes particularly flavorful and creamy.
Ingredients:
- 1.5 kg chicken meat
- 2.5 tbsp Wela Chicken Stock Concentrate
- 1 bunch spring onions
- 3 garlic cloves
- 3 large, fresh bell peppers (red, yellow, green)
- 2 carrots
- 2 beefsteak tomatoes
- 1 cm fresh ginger
- lemon zest
- potato starch
- 1 mango
- 2 tbsp Madeira
- oil for frying
- cinnamon and coriander to taste
Instructions:
- Cut the chicken into large cubes and place them in a bowl. Finely chop the garlic, ginger, and lemon zest, then mix them with Wela Chicken Stock Concentrate, Madeira, and 3 tbsp of water. Lightly dust the chicken with some potato starch and mix well until the chicken is evenly coated. Let the chicken rest in the fridge for 30 minutes.
- Meanwhile, clean the vegetables and cut them into diamond shapes. Dice the mango and deseed the tomatoes.
- Heat plenty of oil in a wok and fry the marinated chicken in batches until golden brown. Let it drain on paper towels.
- Make sure your side dish – whether rice or wok noodles – is ready to serve.
- Heat more oil in the wok and stir-fry the carrots and bell peppers. Add the spring onions and stir-fry briefly. Add the fried chicken and stir-fry briefly. Finally, fold in the tomato and mango cubes and cook briefly. Season with Wela Chicken Stock Concentrate to taste. A pinch of cinnamon and fresh coriander leaves give this dish a special touch.
