Introduction: Minestrone is a traditional Italian vegetable soup that is perfect as a warming meal. With the WELA Vegetable Soup 'Pur' Paste, this soup becomes especially flavorful and filling.
Ingredients:
- 1 package WELA Vegetable Soup 'Pur' Paste
- 1 liter water
- 1 zucchini
- 1 carrot
- 1 stalk leek
- 1 celery stalk
- 1 can chopped tomatoes (400 g)
- 100 g green beans
- 100 g small pasta (e.g. Ditalini)
- 1 tbsp olive oil
- 1 garlic clove
- Salt and pepper
- Freshly grated Parmesan for serving
Instructions:
- Heat the water in a large pot and add the WELA Vegetable Soup 'Pur' Paste. Stir well.
- Dice the zucchini, carrot, leek, and celery into small cubes.
- Heat the olive oil in a separate large pot and sauté the vegetables until lightly browned.
- Add the chopped tomatoes and green beans and let everything simmer briefly.
- Pour in the prepared vegetable soup and bring to a boil.
- Add the pasta and let the soup simmer until the pasta is al dente (about 10 minutes).
- Season with salt and pepper to taste.
- Serve the minestrone hot and garnish with freshly grated Parmesan.
