Introduction: Mediterranean Fish Soup is a flavorful and hearty dish that is easy to prepare. With WELA Fish Stock Concentrate, the broth becomes particularly rich and tasty.
Ingredients:
- 600 g fish fillet of your choice
- 50 g WELA Fish Stock Concentrate
- 5 shrimp
- 2 carrots
- 2 garlic cloves
- 4 tomatoes
- 2 pickles
- 2 stalks celery
- 3 potatoes
- 1/2 liter white wine
- 700 ml water
- Zest of orange and lemon
- Parsley, chives
- Clarified butter for frying
Instructions:
- Wash the vegetables and potatoes and cut them into small cubes. Sauté them in hot clarified butter until lightly browned.
- Chop the tomatoes and add them. Deglaze with white wine and reduce the wine by half.
- Add the zest of orange and lemon, fill up with water and WELA Fish Stock Concentrate, and simmer covered for about 20 minutes.
- Use an immersion blender to puree everything well, then strain through a sieve.
- Cut the fish fillets into bite-sized pieces and clean the shrimp. Add the fish and shrimp to the broth and bring it to a boil. Let it cook for one minute, then immediately remove from heat and let it steep, covered.
- Season again if needed and add the finely chopped herbs.
Tip: Serve the soup in a large soup plate and garnish with a dollop of cream.
