Bulgur Party Salad - Bulgur Party Salad – A Fresh and Healthy Salad Recipe

Introduction: The Bulgur Party Salad is a fresh and healthy option that works perfectly as a side dish or a standalone meal. With WELA Vegetable Stock Concentrate, the dressing becomes especially flavorful and gives the salad a special touch.

Ingredients:

  • 1 kg Bulgur or rice (black-white)
  • 50 g WELA Vegetable Stock Concentrate
  • 100 g parsley, mint
  • 300 g colorful bell peppers
  • 1 bunch of spring onions
  • 2 beefsteak tomatoes
  • 1 can peaches or apricots
  • 1 stalk celery

Ingredients for the Dressing:

  • 20 g WELA Vegetable Stock Concentrate
  • 50 ml oil (olive oil or orange oil)
  • 50 ml fruit liquid from the can
  • 300 ml water
  • lemon zest
  • cumin, pepper to taste

Instructions:

  1. Cook the bulgur or rice in water and WELA Vegetable Stock Concentrate until al dente. Drain and set aside to cool.
  2. Drain the peaches or apricots and cut them into small cubes.
  3. Clean and dice the peppers, tomatoes, spring onions, and celery.
  4. Wash and chop the herbs.
  5. For the dressing, blend water, WELA Vegetable Stock Concentrate, oil, fruit juice, and lemon zest using a hand blender. Keep the dressing cool.
  6. In a large bowl, gently mix all ingredients, except for the herbs. Gradually mix in the dressing until the salad is well coated.
  7. Season the salad with pepper and cumin. Just before serving, stir in the fresh herbs.

Tip: Perfect as a vegetarian side dish for main courses or as a filling for wraps. It pairs wonderfully with our crispy chicken from the wok.
